Cheddar Cheese Grits
1 cup quick cooking grits
1-1/2 teaspoons kosher salt
4 cups boiling water
6 tablespoons unsalted butter
1-1/2 teaspoons Worcestershire sauce
1-1/2 teaspoons hot sauce
1-1/4 cups sharp cheddar cheese, shredded
1 tablespoon paprika
1 tablespoon sherry
1 egg, beaten
1 cup sharp cheddar cheese, shredded
Preheat oven to 300-deg and grease a 2-1/2 quart baking dish.
Bring the water to a boil in a saucepan, then stir in the grits and salt. Cook, covered, over low heat for 5 minutes or until most of water is absorbed.
Remove from heat and add the butter, Worcestershire sauce, hot sauce, half of the cheese, and sherry, stirring until the cheese melts.
Stir some of the hot grits mixture into the beaten egg (to temper it so the egg doesn’t scramble) and then back into the grit mixture.
Spoon the grits into the greased baking dish. Sprinkle with the remaining cheese and paprika. Bake for 1 hour or until bubbly.
