Macadamia-Crusted Mahi with Caramelized Bananas


4 bananas
4 tbsp butter, divided
2 tbsp vegetable oil
Four 8 oz mahi fillets
1 tsp ground cumin
2 large eggs, beaten
1-1/3 cup macadamia nuts, finely chopped in a food processor
3 tbsp fresh lime juice
Salt and pepper to taste



Preheat oven to 450-deg.

Peel bananas and cut lengthwise into 1/4” thick pieces.
