Macadamia-Crusted Mahi with Caramelized Bananas
4 bananas 4 tbsp butter, divided 2 tbsp vegetable oil Four 8 oz mahi fillets 1 tsp ground cumin 2 large eggs, beaten 1-1/3 cup macadamia nuts, finely chopped in a food processor 3 tbsp fresh lime juice Salt and pepper to taste
Preheat oven to 450-deg.
Peel bananas and cut lengthwise into 1/4” thick pieces.
In a large oven-proof skillet, heat 2 tbsp butter and the oil over medium-high heat until the foam evaporates. Saute the banana pieces for 1 minute until golden, then remove from the pan and set aside. Keep warm.
Season both sides of the fish with the cumin, salt, and pepper. Then dredge through first the eggs, then the chopped macadamia nuts.
Melt the remaining butter in the skillet over medium-high heat and saute the fish for 4 minutes. Flip over, then spoon the caramelized bananas on top. Cook the fish for another 2 minutes, then drizzle with the lime juice.
Transfer the pan to the oven to finish cooking the fish—about 7 minutes. Serve immediately.
