Place flour in a small bowl.In a separate bowl, whisk together the eggs and milk.
In another bowl, combine the panko with the parsley, tossing to combine.
Roll each mozzarella stick in the flour, then dunk in the egg mixture, and then roll in the panko crumbs and place on a baking tray.Repeat until all sticks are coated.
Place the tray with the breaded mozzarella sticks in the freezer for 20-30 minutes to harden before frying.
Heat 1-1/2 inches canola oil in a large skillet over medium heat. When hot, add the mozzarella sticks 8 at a time. Cook for 1 minute, then flip over to ensure an even fry, cooking for another minute. (Note: be careful not to allow the cheese to bubble and leak out of the breading.)
Drain on paper towels and serve immediately with warm marinara sauce on the side for dipping.
