Chilled Mango Soup
1 large mango, peeled and seeded 1/2 small red onion, diced 1/2 cup cold water 1 small chili pepper, minced 1 lime, juiced 1/2 tsp ginger, minced 2 tbsp plain Greek yogurt 1/2 tsp honey Salt to taste
In a blender or food processor, puree the mango, red onion, water, chili pepper, lime juice, and ginger.Blend until smooth, then taste and season with salt as needed.The pour into individual serving bowls and place in the fridge, covered, for at least 1 hour.
In a small mixing bowl whisk together the yogurt and honey.
Serve soup chilled, garnished with the yogurt mixture.
