Caramel Apple Bread Pudding
1 cup cinnamon-flavored applesauce 1 cup milk 1/2 cup brown sugar, packed 2 eggs 1 tbsp vanilla paste 2 tbsp cinnamon 1 tsp nutmeg 5 cups day-old bread, cubed 1/2 cup Golden Delicious apples, sliced thin 1/2 cup Cool Whip 1/2 cup caramel ice cream topping Non-stick cooking spray
Preheat oven to 325-deg.Grease an 8” square baking dish with the non-stick spray.
In a large bowl, whisk together the applesauce, milk, brown sugar, eggs, vanilla paste, cinnamon, and nutmeg. Fold in the bread cubes and apple sliced, then let stand for 15 minutes or until the bread is softened and has absorbed most of the custard.
Pour the mixture into the prepared baking dish and bake, uncovered, for 35-40 minutes or until a toothpick inserted into the center comes out clean.Serve warm topped with the Cool Whip and caramel sauce.
