Pico de Gallo (Also makes an awesome salsa)
1 yellow onion, finely diced 1 red onion, finely diced 12 Roma tomatoes, finely diced 2 jalapenos, finely diced 1 serrano chili, finely diced 1/4 cup cilantro, chopped Juice of 2 limes Zest of 2 limes 3 tbsp olive oil Salt and pepper to taste
In a large bowl, toss together the onions, tomatoes, jalapeno, serrano chili, cilantro, lime juice, and lime zest.Stir well, then cover with plastic wrap and let sit in the refrigerator for two hours to allow the flavors to marry.
Just before serving, drizzle with the olive oil.Toss, taste, and season with salt and pepper, then serve over tacos, roasted fish or chicken, or your favorite tortilla chips.
