Pico de Gallo(Also makes an awesome salsa)1 yellow onion, finely diced1 red onion, finely diced12 Roma tomatoes, finely diced2 jalapenos, finely diced1 serrano chili, finely diced1/4 cup cilantro, choppedJuice of 2 limesZest of 2 limes3 tbsp olive oilSalt and pepper to tasteIn a large bowl, toss together the onions, tomatoes, jalapeno, serrano chili, cilantro, lime juice, and lime zest.  Stir well, then cover with plastic wrap and let sit in the refrigerator for two hours to allow the flavors to marry.Just before serving, drizzle with the olive oil.  Toss, taste, and season with salt and pepper, then serve over tacos, roasted fish or chicken, or your favorite tortilla chips.Approximate Nutritional Values: http://www.food.com/recipe/pico-de-gallo-83371

Pico de Gallo

Juice of 2 limes
Zest of 2 limes
3 tbsp olive oil
Salt and pepper to taste



In a large bowl, toss together the onions, tomatoes, jalapeno, serrano chili, cilantro, lime juice, and lime zest.  Stir well, then cover with plastic wrap and let sit in the refrigerator for two hours to allow the flavors to marry.
